In recent years, sweetfish that don't descend to the sea but instead overwinter in dams and lakes can be seen here and there throughout Japan. These are the ones that spend their entire lives in freshwater only, using lakes and dams as substitutes for the sea. For several years now, young sweetfish caught at Agi River Dam have been released into neighboring rivers. Sweetfish are precious! Their ability to adapt to their environment is wonderful.

Sweetfish have been living in the Japanese archipelago - or rather, in this area - for millions of years. Their roots are far more ancient than us Japanese people...

Greetings

murmur of a clear stream. The scent of fresh green leaves. The first cry of the summer bird. — The mountain hamlet of Nakatsugawa Gifu, is now alive with the breath of early summer.

On Saturday, May 16th, at the first light of dawn, the season opens for wild ayu fishing on the Tsukechigawa River. The river's finest catch makes its way to our kitchen.

Misai Garten Furukawa is a warm, intimate Japanese restaurant lovingly run by a proprietress who cherishes cats and wildflowers.

Nestled in a tranquil village rich with nature, where gentle breezes pass through and brilliant sunlight filters through the canopy. With Mt. Ena visible to the southeast, as you listen to the birds' melodious songs, the hustle and bustle of daily life will surely feel like a distant dream. We lovingly gather the bounties of Japan's beautiful mountains and rivers through each season, along with the soft rain and whispering wind, carefully preparing each ingredient with meticulous care, and artfully presenting them on each plate like patterns on vibrant sarasa fabric. As a chef, I feel deeply grateful for this profound happiness. Please enjoy our authentic Japanese cuisine with all five senses - the passionate creation of a devoted craftsman.
