The menu consists of appetizers,  sashimi, hot pot of the wild boar,  steamed dish, tempura, Sunki-soba,  rice porridge made with wild boar broth,  dessert, etc.

We prepare seasonal dishes featuring special ingredients that are only available during winter.

The menu may change depending on the availability of ingredients.

The pot ぼたんなべ (Botan-nabe).

We arrange the wild boar meat on the plate to resemble a peony bloom.  This is why we call this dish ぼたんなべ (Botan-nabe, literally 'peony hot pot').


We cook wild boar loin meat with winter vegetables such as Chinese cabbage and spring onions in a soup flavored with koji miso. You will enjoy a special flavor that is different from other meats.

Sashimi

The plate on which the sashimi will be served is kept chilled in the freezer, and just before serving it to the customer, it is taken out, covered with ice, and the sashimi is then served on top. Cold dishes are served even colder, making them taste even more delicious.

Crispy tempura

We dust the ingredients with flour, coat them in cold batter and deep fry them.

You eat hot, crispy tempura.

"Sunki-duke " is the botanical lactobacillus pickles without salt.

すんき漬け(Sunki-duke) are pickles. In traditional food of the Kiso,Nagano  district, it is the naturally fermented food using  botanical lactobacillus without salt, and help promote digestive health. You eat "Sunki-duke" on soba noodles.

We marinate wild boar spare ribs in our special sauce before grilling them. This is also very delicious.

Wild boar meat is rich in collagen, minerals, and vitamins.

Wild boar hunting is allowed around December.

Wild boar meat is rich in collagen, minerals, and vitamins, so it helps sustain you through the harsh cold and stay healthy.

Only female wild boar aged 2-3 years, hunted during the coldest winter months, provides the most delicious meat. 

At our restaurant, we select only the finest quality wild boar - tender, flavorful, and free from any gamey odor. Once you eat it, you'll want to eat it again.

"Hida beef" is finely textured, soft, beautifully marbled, and has a mellow aroma and flavor. It is one of the most delicious Japanese black beef varieties.
