
Summer Kaiseki Cuisine - Sweetfish-Filled 8250 JPY(included tax)
The menu consists of appetizers, sweetfish sashimi, deep-fried sweetfish, simmered summer vegetables, tempura, rice, soba noodles, dessert, etc.
We prepare seasonal dishes featuring special ingredients that are only available during summer.
The menu may change depending on the availability of ingredients.


We fillet a live sweetfish into three pieces. We remove the skin, dip it in boiling water and immediately put it in ice water.
The plate on which the sashimi will be served is kept chilled in the freezer, and just before serving it to the customer, it is taken out, covered with ice, and the sashimi is then served on top. Cold dishes are served even colder, making them taste even more delicious.
You eat it with miso, a mixture of herbs and vinegar.

We skewer the sweetfish and grill it over an open flame.
The grilled sweetfish looks like it's still alive and swimming at the river.
You eat the hot, freshly grilled sweetfish.

We dust the ingredients with flour, coat them in cold batter and deep fry them.
You eat hot, crispy tempura.

We open the sweetfish, soak it in sake and air-dry. And then grill it.

We cook the rice with it in a kettle in front of you. You eat the hot, freshly cooked rice.
The Tsukechi River flows near our restaurant. Its water is cold and very clear, so it is called the Blue River.


In the summer, you can catch delicious sweetfish in the Tsukechi River.
